IHOP Pancakes

A dear friend I had in Utah (she now lives in Washington) gave me this recipe. I've had it for a long time, but hadn't actually made it. I made it once and it is a family favorite now. We make it often. Once you have these, you'll never go back to bisquick.

1 1/4 cup flour
1 1/4 cup buttermilk
1 tsp. baking soda
1/4 cup oil
1 egg
1/4 cup sugar
1 heaping tsp. baking powder
pinch of salt

In a blender or mixer, combine all the ingredients until smooth. Spoon onto a preheated pan (be sure to spray with pam before). Spoon enough to make a 5 inch circle. Flip the pancake when the edges appear to harden and the center is bubbly. Makes 8-10 pancakes.

I usually double this and we have a few extras. They're just as good warmed up in the microwave the next day.
